Ingredients

  1. Grated Coconut – 1 cup (fresh or frozen)
  2. Dry Roasted Peanuts – a small handful
  3. Chopped Green Chillies – 1 or 2 (Alter according to your spice tolerance)
  4. Peeled Ginger – a small piece
  5. Salt – to taste
  6. Water – 1/4 cup
  7. Oil – 1 tsp
  8. Mustard Seeds – 1/4 tsp
  9. Sliced Shallots – 2
  10. Curry Leaves – a small sprig

Instructions

  1. Grind coconut, peanuts, green chillies and ginger along with water to form a medium-thick paste.
  2. If the paste is too thick, you can add a little more water. Season with salt.
  3. Heat 1 tsp oil in a pan and splutter mustard seeds.
  4. Throw in the shallots and curry leaves and quickly saute for a few seconds.
  5. Pour the coconut-peanut paste into the pan. Stir everything and remove from heat.
